Mondays events - M C saves the day by finding the elusive Parmesan Cheese !  You're my HERO Michael!
Imani bravely lets me take a picture.  Before that everyone was diving out of the way of giving me the "talk to the hand" flinching away.  Oh!  And look she started a trend!

Mr. Garred stopped by, (one of our esteemed Judges from last year) to see what was cooking!  (It was Chicken Alfredo) Kaylee, Mr. Garred and Michael pictured.

And if there was one universal ingredient, it was GARLIC!  Lots and lots of garlic.  Fresh garlic, minced garlic, sliced garlic, garlic in the pod.  9 out of 10 students agree, there can never be too much garlic!

One Pan Chicken Alfredo

One Pan Chicken Alfredo

An easy, One Pan Chicken Alfredo Pasta dish.
Ingredients
  • 3 tablespoon of olive oil
  • 1¼ pounds of boneless, skinless chicken breasts
  • 2 cloves of garlic, minced
  • 2 cups of low sodium chicken broth
  • 1 cup of heavy cream
  • ½ a pound of penne pasta, or any bite-sized shape pasta, uncooked
  • 2 cups of freshly shredded real parmesan cheese
  • Salt and pepper
  • Flat leaf parsley for garnish
Instructions
  1. Start by cutting chicken breasts into 1 inch pieces. Season with ½ a teaspoon of kosher salt and a few turns of pepper.
  2. Brown chicken in olive oil over medium high heat.
  3. It does not need to be cooked through at this point, it will continue cooking as it simmers.
  4. Once chicken is browned, add minced garlic and saute for about one minute.
  5. Add chicken broth, cream, and uncooked pasta to pan and stir.
  6. Bring to a boil, then cover and reduce to a simmer.
  7. Simmer for 15-20 minutes or until pasta is tender.
  8. Remove from heat and stir in shredded parmesan cheese.
  9. Season with salt and pepper as needed.
Notes
Note: Keep pan covered while pasta and chicken simmer.



Cooking Class! Fall 2013

One of the cooler things about working at Vista Peak Preparatory, is Power Session.  And I have lucked into carrying on the tradition of teaching Cooking Class.

So, today was the first day of the week long Cooking Class.  (Then it's a full week of Fall Break - perhaps one of the reasons I like cooking class so much!)

Only half the size of last years class, because it's only Mr. Cron and me teaching it this year.  Starting with kitchen safety of course - and then my afternoon got to cook first starting with
Chicken Alfredo!
The rest of the week looks like:
Lasagana Tuesday morning, and Blogging / digesting in the afternoon.
Wednesday - cook book etc, and Beef stir fry in the afternoon.
Thursday - Chili in the morning and Johnson and Whales demonstration in the afternoon.
Friday - an all day long Potluck Cook off!  The students what to do the competition again this year.  Hmm.  It was pretty darn fun!
